I fell into the bolded part of your post when I worked security at the Foothills Hospital - it takes a special breed to do police/security work. ####ty hours, no respect, dealing with scumbags all the time.
Unfortunately not all the 'special breeds' are the noble ones. During my year and a half at the foothills we got a lot of good guys who wanted to police and a lot of them ended doing just that; but some were total Cop nuts who didn't have half a brain or a stable psyche to go along with it. Numerous guys came to that job thinking it would be a great place to power trip and get their beat on.
I'm not sure which group these guys fall into but I bet it's pieces of both. It takes a lot of patience to have guys spit, scream and punch at you - the 99% of the guys who can have it roll off their back never end up on youtube.

Having worked in security for a few years,and been apart of numerous arrests, I have never ended up on youtube. I have also never given kidney shots to a person I was arresting. It is very useful to have 3 or 4 people participate in the arrest. The reason for that many people is to get the subject under control as quickly and safely as possible. Once they are cuffed,that is usually the end of the arrest and than check for injury.
I have no idea what went on here but I do find it very unprofessional to walk up and yell at the subject after he has been subdued.

What is, and what would need to have happened for the cops to deem it fit to give him a trespassing summons?
He was asked to leave the mall but refused?

I believe it is as simple as being asked to leave by a representative of the property. In this case it is security. Not leaving can result in being physically removed from property (perfectly legal). Resisting being removed from property is called Assault by Trespasser and is a criminal offense (section 41 or 42 iirc) charged under the assault section of the Criminal Code.
Not leaving property after being legally asked to do so ultimately means you are trespassing and can be arrested under the Trespass to Premises Act of Alberta.

Obviously you need to know the whole story but if he was leaving and the coffee cup thing set them off then I think it is a bit of a stretch to say he wasn't leaving in an orderly fashion. The other possibility is the person was previously banned from the mall.

For trespassing,in this case security. But it is only a citizens arrest. In a trespassing case, it would be considered an offense on and in relation to ones property. Since security is handed responsibility for the companies property,they assume the authority to conduct the arrest.
In an assault case, that is just finds committing an indictable offense and is also a citizen arrest.

As was mentioned already, the security guards often deal with the same trash over and over. This guy may have been banned previously, and who knows for what.
Although capable of causing serious trauma, scissors make poor weapons. Is a scissor more likely a tool for commiting crimes? Perhaps for cutting security cables?
