The worst thing about these recalls is that they recall produce from six weeks ago (or however far back). Do people buy a cucumber and have it around for a month or two before they eat them?

I suppose some people could use them for pickles or some kind of preserves with a longer life so there is still a reason to issue a notice.  Carrots also last a long time.

If they are pickled is there really a concern going forward? Doesn't that process kill any of the bad bacteria?
