IMO the easiest veggie dish by far is boiled peas and corn (separately) with some butter, salt, pepper and a pinch of sugar. Just buy packs of the frozen stuff. Boiling water is the most time consuming part.
Easier than boiled potatoes, yam, turnips, carrots, roasted veggies etc. Once it's warm you're good to go. Potatoes take a while to soften.

I said easiest, not tastiest. Boiled peas and corn can be completed in about 15 mins. Mashed potatoes are like 30-45 minutes.
Peas aren't even that bad. I'd take them over mashed turnips or boiled carrots by a huge margin.
WTF is the point of boiled carrots when sweet potato is an option around that time? I like carrots raw and tolerate them roasted. Boiled? Bleh! Turnips taste like a watered down potatoes and radish mash. Bleh!
Cabbage and beets? Sure! Just don't get weird with making it look fancy. Like someone who makes coleslaw and candied beets but adds raisins AND parsley... occasionally ginger. It's fricken holiday salad or roasted veggies, not a half assed fruitcake!

Boiled cabbage is apparently a thing. It seems just as easy/time consuming as frozen peas/corn. I don't think I've ever eaten it this way though though and I don't think I'd be excited to eat it. TBH, you're probably better off bringing boiling Brussel sprouts than chopped cabbage to a potluck. Maybe even boiled or riced cauliflower.
I grew up around farms. Boiling cabbage (a pinch of baking soda helps so that people don't get as gassy when eating it) usually meant cabbage rolls or borscht.

Oh...I grew up around a lot of Russians and Ukrainians, I am very familiar with boiled cabbage, cabbage rolls and borscht.
