How often does it happen that one party wins the Presidency, and does not control at least one of the House or Senate?
It's pretty rare, but it does happen, with Clinton's re-election being the last time.
It used to happen more often in the eras where one party dominated Congress for long periods of time. Between 1932-1980, the Democrats held the majority in the House and Senate for 44 of 48 years, so Eisenhower and Nixon (twice) won elections where their party didn't hold a majority in either house.
Of course, the parties weren't as partisan back then, so it wasn't really an issue. Each party had their progressive and conservative wings and often the wings of each party would work together to get legislation passed. The Civil Rights Act for instance, despite being a Democratic-led initiative, had a higher percentage of Democrats oppose it than Republicans. Without Northern Republicans backing it, it would've never passed because Southern Democrats were so opposed to it.

A Trump Health and Human Services Department appointee repeatedly discussed pursuing a so-called herd immunity approach to the Covid-19 outbreak this summer, new emails obtained by a House subcommittee show.
Rep. James Clyburn, D-S.C., chairman of the Select Subcommittee on the Coronavirus Crisis, which obtained the emails, said the documents demonstrate “a pernicious pattern of political interference by Administration officials.”

Christopher Krebs, Trump's former top election security official, said attacks on the election have undermined American democracy.
