I've owned a bunch of vehicles. In rough order of ownership and including my wife's cars:
1980 Chev C10 Silverado (square headlights, wish I still had this one)
1982 Pontiac Trans Am WS6 (my high school car, put a ton of money and time in but it was t-boned and written off by an old lady with a huge Lincoln)
1984 Pontiac Fiero (we crammed 5 people in this once)
1982 GMC High Sierra (on propane, very cheap to run at that time)

I think you are over rating, under appreciating what an really good EDL can do. I am pushing 300ish HP and about 375 ft/lbs of torque through the front wheels of my GTI, and I am have zero issues with under steer. There is so much electronic wizardry going on up front now, you have to be in 100% maniac mode for the car to get upset in a corner. Also APR tunes the car so well now, they have a torque limiter in 1st and second now to off set any issues.

I bought the Civic put oh highschool. I moved in and eventually married my ladyfriend so I inherited the Neon. Found out my ladyfriend (soon-to-be wife) was pregnant, so I traded my Civic (  ) for a Tacoma, as we needed something with more room since we also had a 175lbs Rottweiler. The Neon got hit by a few deer (seriously they hit me, twice I wasn't even moving and the other time it crashes into my passenger side door as I was driving 100km/h) and eventually died. About a year later I ended up buying a Cavalier from a family friend for a work car. Shortly thereafter my former ladyfriend was suddenly and mysteriously pregnant again, and we decided to trade George in for Django the Durango and got $5000 back.

370whp needs ported K04 or Stage 3 turbo. More like 310/390 if its stock turbo EA888 on Stage 2.

So 316 HP / 381 ft-lbs for me. The gains are so crazy on the stock car, I see zero reason to do anything else. An intake and exhaust is going to give you a very small bump.... Maybe 10-15 HP, for 3x the cost of just the flash.
But I hear putting a Sparco, Type R, and Mugen Power decal adds like Infiniti horsepowers.

I think the downpipe is worth the extra 30 or so from Stage 2.

An Electronic Differential Lock puts the brakes to the spinning wheel. I've had this feature on several cars.
My opinion of having fun in a powerful car is not having the brakes put on one wheel while I mash the throttle.
Nor is it to have the software limit torque in 1st and 2nd.
I think you're underrating how fun it is to have a car with significant power that you can fully use, and even scare yourself with the throttle without even being close to any danger of leaving the road.

Tourque limitation is coming standard on a lot of new cars. Even AWD ones. Manufacturers don't really advertise it though.
And the GTI performance pack now has a mechanical diff lock.
Different strokes for different folks, but no matter how you cut it, my front drive GTI with an APR tune, has beat the snot out of a new Golf R stock. For about 10k less. And regardless of AWD, it would do the same on a track, the gap is that long. AWD won't make up for the power difference.
