I'm sure they knew but chose to do it anyway because they knew the potential punishment would likely be minimal and they would be better off getting to Nashville the night before the game, rather than travelling that morning.
Of course, they still lost the game 4-1, so any benefit they got from getting to Nashville early didn't help. Meanwhile, Chicago had to travel to Denver for their game, which is further than Philly to Nashville. The Hawks won their game 5-2 despite (presumably) travelling that morning. So, it's not an exact science.

They traded a day off with family during the holidays for work, big deal. They gained nothing from it.

Hextall claims he knew about the rule and that the players approached him and asked to fly a day earlier. Hextall then claims he risked the fine because he thought the advantages of being their earlier outweighed the fine.
