No, tips are meant to provide what the *CUSTOMER* wants for ********************THEIR HARD EARNED MONEY*****************. Good service means to give the customer what they want for their money.

They are there to control the server because the server wants your money.
It's like dangling a present to a kid and saying if you want this present you study hard and get a good grade if you want it. If not, you won't get the present. Understand? It's POSITIVE AND NEGATIVE REINFORCEMENT.
That's what tipping is. To give someone something they gave to you, good service. They want something, I want something. The way to get it is to do what *THEY* want you to do, DUHH.

It's funny, but that's how tipping really works, except if it's something the server actually has control over. In this, the server has no control over some of the these things, so I am not specifically saying what he is. What I am saying is, you do poorly, you get deducted. You do well, you get rewarded.
Her not knowing the dressing is something she should know, so in that case I agree with a tiny deduction. She also should know which person had which drink. Minor mistake, but still should know and you notice how she didn't even *TRY* to get it right just brought out the drinks without looking at her written order. She should have read her written order before bringing it out, noticed which one was for which person x x They were sitting just like that. So on the tray made sure the drinks were in that position left person had red wine, right person had white wine. See the not "TRYING" her best?
Now the bread quality wasn't in her control, that was just for laughs for this show. I have never watched this show before, but this video is funny. Them being out of something wasn't her fault either. Just saying it's a funny silly video.
Tipping works based on what does the customer want and satisfy them, not yourself as the server or owner or manager.

She seems so much more unhinged than last time. Or maybe we backed away from the crazy train sooner. I think its time for another 9-12 month layoff until someone bumps this or the other server thread and she can return once again.

I AM since I am paying 90% of their wages. They work for me if they want my tip money. That's how it works.
Controlling is rewarding, because it's rewarding them for them to do what **********I***************ONLY WANT THEM TO DO, NOT what someone else wants them to do for *MY TIP MONEY*.
Why am I paying them a tip if I can't get things how *I* want them, huh? WHY BOTHER PAYING A TIP if someone else is in control, huh?

You don't control them, you don't get to tell them what to do. You are able to make requests, which they carry out within the rules of their employer. You keep trying to make up these rules, like getting upset that they bring you a refill you didn't ask for (usually a requirement from the employer)
You live in a fantasy land where just because you're paying for a service you get to make up the service that should be received.

You are wrong. No manager is forcing a paying tip customer to take something at their table they do not want. That's ludicrous for you to say such a thing.

No, because I do get things how I want it a lot of times. You live in a fantasy world to think that someone that isn't paying for the service gets to rule it.

No you don't have to take it. But sane people don't get upset about it, they just say 'No thanks'
Most restaurants have a simple policy. A guests drink should never be empty. If you're drinking a coke, and it's a third full, they should bring you another coke immediately. The guest shouldn't have to ask every time, since them ordering a coke implies that they want coke.

No, I live in the world of managing successful restaurants. Luckily my customers aren't crazy like you are. You don't get to 'rule' the service, you simply receive it. If you like it, tip well. If you don't like it, don't tip well. But don't get all huffy and puffy because a server did something that wasn't 100% to your specifications, like bringing you a free refill before you ask for it. That's simply insane.

If a server has a four-table section and each table turns over four times in a day, that's 16 tables. You and your husband are one of those 16 tables. Assume six of those tables are parties of two, and ten of them are parties of four.
Therefore that server is probably serving 52 people that day, of which you represent 2 people.
So on average you wouldn't be paying 90% of their wage, you would be paying about 3.8% of their wage, not including their hourly.
