Simply the fact that UI is generally considered "ugly" in screenshots. Most games have the ability to hide the UI for screenshots.
The UI has been seen plenty of times.

I am really hoping they bring back ports, loved building my industrial sector around them.
I cant see how they cant have subways.
I am sure there will be a "Rush Hour" upgrade released 18 months after - I hope I have the will power to wait until it comes out

Thats part of the draw to this game for me; being able to have multiple cities that serve different purposes is something Ive always wanted. Have one giant hellhole for heavy industry, poor people, coal powerplants, and garbage, all just to serve as the "Ogden" for a nearby hightech, dense, urban utopia.
