Ok, this is going to be a bit long, but it's easier than it sounds.
I will tell you how to install the custom firmware first. Then I will tell you how to install the homebrew packages. Last I will cover getting roms to show up in the emulators.
To install the custom firmware.
On your PS3 go to Settings, System Settings, System Information. Make sure that the System Software is 3.55
Grab the custom firmware from
http://www.geohot.com
Unzip the file and place the firmware (PS3UPDAT.PUP) on a usb memory stick in the folder structure /PS3/UPDATE/
Insert the USB drive in the PS3 and go to Settings, System Update
Choose "Update via Storage Media"
Choose the Firmware on the usb drive and go through the update process.
The system will reset and beep a few times rapidly, then is should shut down. When the system shuts off, turn the system back on from the console itself, not with the controller.
When the system turns on, there will be an additional option in the game section called "Install Package Files" If you see that option you now have custom firmware installed.
To install the homebrew programs.
If you just want the SNES and Genesis emulators, grab them from these links.

Unzip the files into separate folders.
In each folder you will see 3 different files ending in the extension ".pkg" The only files you need to be concerned with are the ones that have "geohot-cfw3.55" in the name. (both the SNES and Genesis emulators have that as part of the file name)
Copy the appropriate pkg files to the root directory of the usb stick. (no folders, directly on the drive itself)
Insert the usb stick into the PS3, and choose the "install package files" option under the games tab on the PS3 menu. You should see both files pop up, choose to install them.
That should be it for actually installing the programs.
Now for the roms...
To make things easier, you can keep the roms on the usb stick (it's impossible to put them on the PS3 hard drive without a file manager or an ftp client and I know you want to keep this simple).
Just put your roms on the usb stick in folders labelled SNES and Genesis.
Within each emulator there will be an option to choose your default rom directory. When you choose that option you should see something that looks like this.

dev_flash3
dev_hdd0
dev_usb006
host_root
I don't know if the directory structure looks exactly the same on every PS3, but the one you want is the one that has USB in the name.
You should then see the 2 folders containing the roms. Highlight the appropriate folder and press the "square" button on the PS3 controller. (Don't actually go into the folder, just highlight and press square). You may have to exit the emulator and restart it to get the folder change to take place.
Both emulators have similar options and operate in a very similar manner, so this method will work for both emulators.
The emulators are not the most user friendly yet, but they do show you navigation controls at the bottom of the screen. Until you are used to the navigation I would suggest always looking at those before selecting anything. i would also suggest going into the controller options so you can learn how to reset games, exit to the menu, choose different roms etc.
