Man, I never realized that there were so many sushi joints in Calgary now. Back in the day there was Sushi Hiro and Sushi Miki on the #1 just before Bowness that were passable to a guy who's pretty particular about his raw fish.
Also choked that the Sultan's tent is no more, but I have to back those who voted for River Cafe here - great spot, great food and (compared to Tokyo) unbelievably good value. The locals here would hit you up $100/head without drinks and if you're not on a bender a glass or two of booze, appy and entrees with tip would set you back about that much.
As for Italian, there was this place north of Bridgeland called Vagabond that was pretty awesome, as well. Man, I need to make a trip back home just to eat...

Capo too.
I frikkin' loved Sultan's Tent. Food took forever because it was made to order, and it was always great.

Is Capo good?
Il Sogno was excellent with when Gusepi (spelling?) was there.

I feel sorry for the chef that has to work in the smoky fish-bowl, grilling steaks in front of the customers.

Someone mentioned Ruth's Chris.
Never tried it, but I read a funny review of it in Las Vegas last week. Basically, they could not get over what a strange name Ruth's Chris is grammatically.
Who is Ruth and why is she so possessive of Chris? Does Chris need a restraining order?

Go there and enjoy. It's nothing like Teatro, except for the prices

I read half this thread, then the other half later, and I'm not quite sure if anyone has mentioned The Metropolitan Grill yet. I have never been disappointed in anything I've ordered from there, and their menu seems to be changing all the time. It's a high quality restaurant, without the accompanying high quality price.
The two most overrated, IMO, are River Cafe and Smuggler's Inn. River Cafe is #1 for ambiance, but I've been there three times, and the food was always just a bit above average while costing a fortune. I order steaks there, so maybe I'm missing out on whatever it is that they do truly exceptional.
I've been to Smuggler's Inn more than five times, and have always been disappointed. The steaks either look and taste like they've been pan fried, or they burn their meat, giving it a beef-jerky-like toughness like that found in the bulk bin beef jerky in Mac's convenience stores run by East Indians or Chinese. And I always forget my night-vision goggles at home.
My other two favorites are Saltlik on Center Street and 8th (I think) and that Brazilian BBQ place on MacLeod Trail near Chinook Centre.

from wikipedia, but I've heard enough versions of the story to assume it is true
The chain was founded by the late Ruth Fertel, a single mother of two, in 1965, after she bought the existing Chris Steak House in New Orleans. In buying the restaurant, Fertel had to agree that the restaurant keep the "Chris" name for a specified period of time. After the original location sustained a kitchen fire, she relocated the restaurant about one-half mile (0.9 km) to the west on Broad Street and renamed the rebuilt establishment "Ruth's Chris." Under the purchase agreement, the name "Chris Steak House" could not be used at any other location, and she did not want to lose customers already familiar with the Chris name.
haven't been to the Calgary one, have heard mixed reviews....when traveling on business (rarely) in US cities, I do like to hit up the classic steakhouses and have enjoyed Ruth's Chris

As far as sushi goes, I find Wa's and Misato to be the top 2. Both are consistently very good.
The globefish on 14th was good until they moved, but I find that one to be average now though I have heard that the marda loop one is much better.

Yeah, this is the problem with Calgary - there are absolutely zero restaurants that have a complete menu. There's always a few stinkers.

Cant go wrong with Mongolie Grill (It is now moved to Beacan Hill and is called Xen - same owners, same staff, same food)
edit: There is still one downtown.
