Ok, so this is a bit of an easier category to figure out. Good action films are hard to find these days, but when they're good, they're impossible to forget. I specifically want films with explosions, no swords/arrows/fists as the main weapon as there will be other chances to list those films.

There are some action movies above that I would list in a "best action movie" list, but in terms of best action movies with explosions, my list is a little different.
True Lies - Bridge blows up
Terminator 2 - Cyberdyne Systems blows up
Predator - The Predator blows up
The Rock - Nicolas Cage is almost blown up
Die Hard - Nakatomi tower roof blows up.

HM: Die Hard with a Vengance (Didn't want to put 2 in there from the same series), Heat (but felt it's miles above and beyond what I'd call an "explosiony action movie").
The Raid 2 is #1 on my list. I saw the movie in the theatre three times, and each time you hit a part near the end and your adrenelin is just wore out. You need a breather to get your second wind from an entertainment perspective.

I'll add a few more that haven't been mentioned, although I'm glad no one has brought up Transformers. My actual top five have already been posted, so I'll go a bit outside the box.
War of the Worlds - Quite honestly the first half of this movie is absolutely fantastic. There are some stunning scenes, and I actually think the human dynamic is quite compelling (up until Tim Robbins). Like others I have a huge problem with the ending, but overall the movie is underrated.
Edge of Tomorrow - Yet another Tom Cruise movie, and I feel like he's been in a few others that could be mentioned (Mission Impossible 1 3, and 4 comes to mind). Maybe it's because it's so recent, but I thought it was a very fun movie. As long as you're willing to buy into the concept the movie is a total blast. In terms of something more "original" I liked just as much as Looper. Once again it's another movie that doesn't land the ending, but 80% of it worked.
Demolition Man - Okay I'm probably just mentioning it since it's on right now. But I think this movie has aged pretty well. I've never been a huge Stallone fan, but for once his deadpan delivery actually worked in a movie. Over time he just became worse and worse, and now I can't stand really anything he does. Then add in Wesley Snipes as a pretty kick-ass villain, and you've got a pretty great action romp.
The Fast and the Furious series - Not really going to spend a ton of time explaining this one, but the series is pretty enjoyable. They're not movies you'd want to watch alone or watch multiple times, but generally I find each first time viewing experience to be a thrilling one. The movies are seemingly getting better each time, and adding in Jason Stathem should only help matters.
Oh and to back-up my selection of Face/Off as the best ever, I remember it once being on New York Times 1000 movies ever made. It's really the only bearable John Woo American movie (Broken Arrow, Windtalkers, and Paycheck are not good).
