Curry Pastes?
Looking for opinions and recommendations on curry pastes.
-Brands: Blue Dragon, Maesri, Mae Ploy, etc?
-Jars, cans or individual packs, etc?
-Types: Thai Red, Green, Indian Butter, etc?
-Best places in Calgary to get them?
Not looking for recipes to make the paste itself but would also like any easy Curry noodle, rice, or soup recipes.

I'm a fan of Kitchen's of India.
Cheaper than the jars usually and makes much more. You just need some butter and some milk. Put in some coconut milk if you want (recommended).
I usually just fry some chunked up chicken breasts with some variety of bell peppers, onions and garlic in some coconut oil. Sprinkle a little curry powder on the chicken/veggies.
Meantime heat up the milk/butter/paste and once the chicken is done just toss all the fried stuff into the pot with the sauce and let it simmer stirring occasionally until it's the thickness you want.
Honestly usually tastes better as leftovers after it's thickened up in fridge overnight.

You didn't mention it, but have you ever had Japanese curry? When curry was first introduced in Japan, they tweaked it a bit by making it more to the taste of the Japanese which is mainly that it's a little sweeter than Indian curries.
S&B brand is what I buy, which you can find at Asian grocery stores and I recommend it. The directions are in Japanese but use Google translate and it's easy. It's just dried cubes of curry splendor!

I've tried about 10-20 different types of curry pastes over the past few years and I keep going back to Kitchens of India (the butter chicken is my favourite). The packs usually sell for $1.99 but don't be fooled by the low price, the flavour packed into that small package is enough to make a decent sized pot of curry. I know Sobey's sells it, as well as No Frills.
I'll also recommend the brand Sharwoods as a half decent replacement, but I find most jarred curry's lack flavour/spice so I always end up throwing in a bunch of extra Madras curry power.

I like the Mae ploy Thai curry pastes. Awesome.. Both green and red are great. A little tub will last you a pretty long time. The heat is fairly strong I'd say

Found #### Brand Green Curry Paste from Superstore was fantastic.
I tried the red paste too and it had lots of flavour.

Of course, #### is filtered, oh well. I stand by it, and recommend #### to everyone.

Just curious, if you're into making curries why don't you want to try making your own paste?

I usually have a jar of the mild and medium Sharwoods paste in the fridge, and I keep a ton of garam masala in the spice drawer and a jar of ginger garlic paste in the fridge.

In the same vein, but Glico curry sauce from Japan is about the easiest curry to make out there, and is super delicious. It's more than just a paste - add some veggies and water and you're finished.

I will at some point as I enjoy cookng and there are some good looking recipes online, but this info request is because I want to find some good quality easy options to keep in the cupboard or fridge.
Having the right stuff handy can be a quick and better option than take out. Healthier for sure.

I use this one, it's great for coconut curries and they have a red paste too. Really spicy if you use a lot of it. I just buy it at Sobeys:

Buried in an earlier post is a mention of using coconut milk. I highly recommend this.
Also, coconut milk added to rice when cooking is an easy coconut rice. Goes well with the curry. I usually do 1/3 can in curry, 2/3 in rice or 50:50 curry/rice. No need to leave open can of coconut milk with no idea how to use it up. I do suggest shaking the can before opening though as it sometimes separates a little bit.

We really like Thai Kitchen (red) curry paste.
They sell in small jars (enough to make 2-ish curries).

If I only need a little bit I pour the rest into a medium size ziploc bag and freeze it. You can then just break chunks off as needed.

I find the green Mae Ploy curry paste crazy hot. Tasty, but crazy hot. I really like their Penang curry paste, it's not near as hot. (Totally different flavour)
