I think the big problem in all fantasy stories is drawing things to close. All the expansive world building slowly gets narrower and narrower and you are left moving the remaining chess pieces for their inevitable final battles. Narrowing the world is just not as exciting as every one of the payoffs you are looking for is more exciting in your own mind.
The plotting in 7 could have been better but chess pieces needed to be moved into certain spots for this season.
I think the reason Martin can’t finish is that he got stuck. He couldn’t deliver the same subversion in his final books and instead was left with cliches

He kept on finding ways out and dragging everything on.
The showrunners dont have that luxury. They've got to wrap things up whether Martin wants to or not.

I thought that was a fantastic season premiere and everything about it was better than last season. It majes hopeful they fast forwarded through last year to get to the real story. Dialogue was witty again, the sexiness was back, and.the story was well paced. Maybe some cringiness in the love story part but the impending doom of that relationship made it work.
I had modest expectations, but that episode was quite good. We got to see all the reunions were were expecting, and they were handled well. Plot was moved along without too much teleportation except for
Spoiler!
young Lord Umber making a speech in Winterfell one minute, then back at his holdings two-thirds of the way to the Wall getting killed by white walkers what seemed like a couple days later- does that mean the white walkers are only a couple day's march from Winterfell?
