The very first post states vote on your favourite BBQ foods. Who does prime rib on a BBQ? It isn’t very common at all and isn’t the best way to prepare it.

It appears that some people took this as a BBQ/Grilling pole vs some people assuming best meat regardless of cooking method.

Nice, Big Sky is actually fairly close to where I live too, I was there last year for an Oktoberfest party. After seeing the quintessential Alberta cut of beef get beaten by it, my expectations are sky high! Definitely have to try it soon

I went to big sky once for lunch and wasn't there overly long. When I went back home several house later my wife asked me if I was near a campfire.

That's when you know its good.

Man, tough choice for sure. Can't really go wrong with either rib eye or brisket.

Went with rib eye only because it has a smaller margin of error when cooking it. Brisket is more tedious to make and has to be done perfectly. When executed properly, it is awesome, but when it isn't, it is just OK.

I have never had good brisket at big sky. I have had good chicken and sausage but never the brisket.

Hayden Block is a pretty safe brisket, as is Paddy's. Can't really go wrong there.

It's not unlike burgers; there are some pretty good burger places around town, but generally speaking, if you know what you're doing and are willing to take care with it, you can probably do better on your own because you're not cooking for large numbers of people.

Its funny I feel the same way about the tenderloin because its so inherently bland and lacking any texture. Once you get past the outer 1mm, it's just gamy mush.

I do sort of agree with roasted prime rib though. That cut is so much better sliced into steaks and then grilled so that the fat gets properly rendered and every bite at least has some caramelization and seasoning. The only highlight of the roast is the au jus.

Ribeye for life. A mesquite-smoked ribeye, slow cooked on the grill to a perfect medium rare is just a thing of beauty.

I was once lucky enough to have just Prime Rib cap, the Spinalus Dorsi, and that was the most delicious meat I've ever had. It is a shame that the muscle isn't bigger and more readily available.
