Tracy Chapman - Fast Car
REM - Everybody Hurts
Blue Rodeo - Hasn't Hit Me Yet
Bruce Hornsby and The Range - Mandolin Rain
The Odds - I Would Be Your Man
Midnight Oil - Beds are Burning
Temple of the Dog - Hunger Strike and Say Hello 2 Heaven

As well as several others already mentioned such as Bruce Cockburn, Queensryche, Sarah McLachain...

If you understand French, this chick is great. She has another song called "Dieu que pour toi" that is one of my favourites of all time but doesn't seem to be on youtube. This one is pretty good too:

I've got a list of songs that just give a chill every time I hear them. Many have been mentioned (Fast Car, Dance me to the End of Love, Hallelujah, Imagine). Some of the ones that have not are below:

Good thread. Here's a few I can think of from the top of my head:

Telegraph Road:

Sultans of Swing:

Revolution:

Hey Jude: (This one really stands out for me personally. Paul Mc is my friends cousin so I had the amazing opportunity of seeing Paul play this on my friends piano! I was only 6 years old at the time and it's lasted with my forever. Just an amazing thing to see. I remember being stunned that somebody could just sit there and play and sing a song like that. Fantastic!):
