How has no one brought up Descent Freespace 2 or a sequel thereof. That was the pinnacle of space sims before the FPS flood took over the industry.

ALL ABOARD!
I know it's a recent game but I would love to see the Ghostbusters game remastered and expanded. They were able to get everyone back together to do the voices and it's well written. I just think they could have added an "open world" aspect to the game where you're able to take on other jobs outside of the storyline.
You're never going to get the cast together again so it's our only hope.

Yes yes yes. Freespace and Freespace 2 were so good.
I think they still hold up really well today, you can get them both on gog.com too.

The entire *Quest series (King's, Police, Space)
Dungeon Keeper 2 (rebuild from the ground up, without any of the bugs and using a current graphics engine)
The entire Dragon Quest series
FF 1-9 (Don't need any cheesy voiceovers, just the actual story/gameplay for each game, but with modern, 3D graphics)
Master of Magic (just take the original Master of Magic and slap it on top of the best sim of all time, Civ 4)
All the Bioware D&D games

Pretty much, I had the sequel "Battletoads in Battlemaniacs" which may have actually been worse!

Sadly, I think these and the SCUMM games would not fly with this generation of gamers. I doubt a remake of any of these would happen. Monkey Island 1 and 2 are likely the only ones that have and that will ever get a make-over (oh and apparently Grim Fandango).

Covert Action - Flawed, but fun. Can't seem to find a modern game that scratches the same itch.
Darklands - Loved its historical flavor, could use an interface upgrade at least.
Master of Orion - series got too complex, go back to basics but with gorgeous 3d space battles.
KGB - I'm imagining something like LA Noire (without its arbitrary interrogation system) but set in 1991 Soviet Russia.
X-Com: Terror from the Deep - I'm aware of Xenonauts and EU/EW, I just want to experience the terror of facing Lobstermen on the 2nd month again.
