I can't believe the fuel mileage I get on my 5.3. I swear it's better than my 2009 Tacoma was, and it's bigger, more comfortable, and can haul way more. I'd like to get another GM/Chev with a 5.3, but haven't done any research yet. Anything you could tell me would be appreciated.

Pre 2003 had older interiors across all GM truck and SUV lineups, and had all sorts of quality control issues and electrical issues with the interior, and electrical in general.
2003 they refreshed the interiors a bit and fixed some of the more terminal electrical issues, and was better, but by then 2006, that platform was 6 years old and needed a more comprehensive makeover. I had a couple Avalanches (2003 and then 2004) and they had the odd electrical and quality control issues still.
In 2007, the interior was totally redone and many of those quality control and electrical issues were solved, along with much more modern interiors for the time. The mechanics of the trucks remained unchanged....pretty solid.
GM usually had a life cycle to roll everything over after 5-6 years...the next gen of trucks (and SUVs, that are based of trucks) would've been here this year or last, but GM took a couple years off of those programs 4 years back to become, you know, solvent.
The 5.3 is bulletproof. The Yukon XL we just got out of had over 210k (3/4 put on by previous owner) and it was a 2007. Zero repairs outside of regular oil changes, in the almost three years of having it, and having it inspected thoroughly before getting it in the first place. Compared to a Denali XL we had before that with the 6.2L, which had a few issues (but I suspect that was due to it being an AZ import).
As for advice, don't think you can go wrong if you're moving up a few years into a 2007. Not really any major issues with them that I recall, even in the first year. More refined interior, better quality control overall. I don't think they got rid of too many options between 2006 and 2007, trucks especially, as sometimes happens as companies change who they're trying to attract and/or in cutting costs.
Depending on the model and options you're getting, I think the 07+ Sierra looks better then the Silverado, but complete personal preference.
