You are probably correct on the first part. Especially if you buy vegetables from the supermarket.
People who grow theirs at home are only subject to the chemicals THEY put on, and the chemicals already on the seeds.
Tomatoes for example, are picked when they're green, put in some chemical to speed up the 'turn to red' process. I'm sure you lose a lot of vitamins or minerals when that happens.
