If you were just looking at a piece of paper and adding a number to a page, sure. But for each batch, they have to open the envelope, open a second enclosure, verify the date, verify the signature, flatten and send over to the vote counters in another building. Those people run it through the machine. The machine then spits out any votes that have any irregularity, which then need to be individually reviewed by the administrative panel of democrats, republicans and independents to make a call about what the voter's intent was. Until all of those review ballots have been ruled on, the entire batch has to wait.
It's not a very fast process. There are a lot more steps to verify the validity of mail in votes than there are for in-person votes, which is one reason that the Trump campaign complaints are so silly.

Unfortunately, there's no realistic way Biden doesn't get a recount call struck against him since his margin of victory will be under .5% (~25,000 votes)

Does it count if he takes GA, PA, NV, and AZ?
I have not been able to travel for work since Covid and I miss it. Got down to TN and KY every two months or so to visit distillery customers.

I am okay with a recount. The chance that alters things is slim. As long as Biden has a lead.

I would love to see what it looks like behind the scenes as well. Some of these observers must be getting tense and irritable.

Wisconsin was called yesterday. It is within recount range, but historically recounts have only flipped at most a few hundred ballots. Biden's margin of victory is over 30,000. It'll be fine barring any Trump shenanigans with rejecting ballots.

Hard to argue, but on the other hand Biden won the most votes ever and the highest % of eligible voters in decades - hard not to look at that in isolation as an achievement. But give credit to Trump and the GOP for also massively increasing their vote including in key demographics. As much as the Dems almost lost the GOP almost won.
