I can't believe I have to explain this, but I will:
Let's say my server asks me if I need a refill of dr. pepper, I tell them "Can I get a coke instead?" They say "sure" and I say "thank you." So they go to get it and come back with it.
Doing it your way the server went to the soda station or kitchen to grab a glass, put some ice in it, and then put some liquid in it. Then had to make it to my table from the kitchen area or soda station when they were let's say closer to my table before they went all the way over there(yes this has happened I watched a server do it once). They come with the refill and I tell them "Can I get a coke instead." Their response should be "sorry", because that time it took to GO to the soda station or kitchen, Grab a glass to get some ice and dr. pepper only to have to throw it out and even let's say the syrup is out for that and no one at my table ordered that, so that would be wasting more time, but let's just say for argument sake that the syrup is not out, well it's still takes
TIME TO FILL UP A GLASS WITH ICE AND DRINK. IT STILL TAKES TIME TO GO TO THE SODA STATION OR KITCHEN AND BACK, especially if they were around my area already. DUMPING IT OUT TAKES TIME AS WELL!
The Red Lobster waiter could have had my refill to me faster if he would have came to ask me. Probably an extra minute at least or if he has to change the syrup or go a far from where my table was would have wasted more than a minute even.
I can't believe you don't understand this???? REALLY? I cannot believe that someone has to actually *EXPLAIN* this to you? Every SECOND COUNTS, EVERY SECOND COUNTS!

A number of servers don't write down orders. Pay attention for example like when let's say you order even something like a bar drink or dessert or order your first round of 2 cokes or waters, most servers aren't writing down drink orders. I would say that's even MORE of a commonplace that most don't write down drink orders. Most wing it per say with that. They feel they can remember a coke and an iced tea for example. Maybe if you are in a large party. What party amount are you in? I recently went with my parents and my husband the waitress didn't write ANYTHING down, got my husband's side dish wrong and put in the wrong temp for the burger. 4 people. Now I am amazed she did remember all of what we ordered, because there was a lot of modifications and food we ordered. That being said, I'd rather have someone that wrote it down than someone that didn't try. Do you go to any chain restaurants for example?
Also, you say "orders down", but I am also referring to *ALL* request. I am so sick of my bag getting forgotten or a box, because they were too lazy to write the LIST down. I ask for like 4-7 things at the end of my meal normally. For example, "I would like a box, the check, a bag, 2 containers for my ranches, and a to-go coke. 6 items total. The average server, in fact 99.9999% of servers would NEVER write down a list like that. They are too lazy to.
Also, at times we have ordered a dessert in that mix of request. That's 7 items not being written down when they leave my table they could get called over for other things for other tables as well. Even if they aren't called over, that's at least for me personally, very hard to remember 7 things at once. I would have to write it down.
At Corky's bbq for example, I asked a waiter during mid-meal more bread, extra napkins, and a refill on my soft drink. He forgot the napkins. That's only 3 things. Most servers don't write that down. More bread is an order btw. That's ordering food, even if it's free food, it's still an order for food.

There's another one called decent service where it's not good, but not really bad either like 12%-15% range type of tip they'd get. I start at 20%, it can go up or down depending on the service. 25% usually is my norm for excellent service, but I do tip higher like 30% at times even if I have had exceptionally excellent service that went beyond my expectations.
Bad service would be not trying their best. Bad service would be not being nice about a mistake by not apologizing. Bad service would be not caring.

I have had 4 servers ask me "You might have to remind me" when I ordered a bunch of condiments. That's pretty lazy. I did go off on one waitress at Applebee's though when she said that. It was only like 2 ranches and 1 side of extra pico de gallo. That's it, it wasn't like I was asking for 7 things or something. I mean wow. The first time I had someone say that was at Denny's. So when I had ordered 3 syrups and 2 butters for the grand slam, he's like "You might have to remind me" as he was going to decide not to write all of that since he was lazy. I asked him just like this "Why would I have to remind you if you write it down?" He had nothing to say then. The Applebee's waitress didn't want to write down the condiments/pico part. So when she said "You might have to remind me" I said "This isn't McDonald's that you are getting a tip. You compare your written order with the food, component A check, component B check, etc. You can bring them out ahead of time as well if you'd like." That's basically somewhat what I had said. I can't remember exactly, but I did say the McDonald's bit. So she got it right, but gave her 8% and reported her to a manager for being so rude and RIDICULOUS. I am not the server here. That's ridiculous. If I have to remind the server, then what kind of tip do they think they are going to get to do it on
purpose not to try to remember what I said, huh? The other times I was with a group of people, so I couldn't say anything to mess with other people's outings, like one was after a funeral, so yeah, I couldn't just say anything to her, I had to just suck it up, but I did report what she said to the manager there. It just pisses me off that servers are like that out there. I mean if you don't want to work, WHY are you a server? That's what I want to ask them.
I have bad service a lot, because most servers don't try their best. They just don't. Most don't make sure what they are handing you is correct as far as what things they can control.
