So now what the hell is the point of the 2000 dollar bbq I bought this summer? Sounds like I should have just bought a sous vide!

Pre-heating the water is the only advantage I can think of. Turning it on before you get home from work so you can drop your food in. Sous Vide requires no temp change so it is pointless past that scenario.

Propane is a bastard gas. I sous vide my burger to a nice medium and sear on cast iron using my green egg with smoke. Best of all worlds.

Even with a sous vide cooker the best results come when you finish the meat or even veggies on the grill or BBQ at super high heat to get the caramalization.

You could get equally good result on only your BBQ but it takes a lot more skill. Sous vide is pretty much idiot proof.

I tried searing steaks on the BBQ and it sucked for me. Cast Iron pan was the way to go. It could be because my BBQ sucks though.

Depending on the size of the bag I normally do 2 steaks per bag and have done up to 8 steaks at once. I use this as my water container for all of my cooking.
