Okay, so the thing you have to realize is that back in the day, they didn't have ####ing heirloom tomatoes at the grocery store year round. They had fresh tomatoes in August and that WAS IT. You have some imagined scenario in your head that in the 70s grocery stores there were these tomatoes in February. And those grocery stores didn't sell heirloom tomatoes. You have no idea the rabbit hole that are tomato cultivars, but it was most likely Early Girl and Beefsteak that they sold and that was it.
I ####ing remember when fresh blueberries were available in July and that was that.

That's unfortunate. My wife and I recently rediscovered NoTable recently and really enjoyed it. Unfortunately we get 1/2 cow every year so get our fill of beef at home, we rarely go out for steak now (no pun intended).

Speaking of gear grinders, I still wish we had the good #### from Japan, not the crappy Chinese ones.
Last Christmas I found the Japanese ones at Amaranth. I seem to remember them not being much more, and were still absolutely delicious. The Peru ones you can get sometimes are pretty good as well, better than China.
I completely stopped with the China ones. I had watched a show at some point that showed the pollution some were grown in downwind from factories. Basically little cancer balls. Not worth it. I'm sure they all aren't like that, but how are we to know? Can't imagine we get sent the best ones.

I didn't realize they changed but it has been about a year since my last visit. I would guess they saw an opening in the high end steakhouse market in the NW and decided it was a good business opportunity. We only have The Keg along with Nick's and neither of those are really high end places, in my opinion.
It doesn't mean anything, that's just nonsense. "Next level" means "change your restaurant concept?"
I will say brunch and lunch still seem more or less as before. I wonder if this is a thing where they determined people didn't want to pay "above Earls" prices for a quality sit-down dinner without a theme of some sort attached to it. Either way I will try it eventually it's just... there are already good steakhouses and I liked NoTable as a less "niche" thing.
