They're using that term because somebody in senior management issued a directive to use gender-neutral language even in cases where every person being referred to is of the same sex. This is a silly thing to do.

The IIHF changed it Too Many Players on the Ice some time ago because their rules apply to both the Men's and Women's games.
 
The AHL has at least one female Linesperson, so it's likely just a matter of time before she (or another woman) gets a shot in the NHL. No reason for them to not get ahead of the game on this.

Also I find 'Goaltender' an offensive term, as if the Goal is incapable of tending to itself, the official pronoun should be 'netminder.'
