What would be the rationale for either side to have a NMC for 7 of 8 years of a new contract, but not the first year?

The Toronto goalies have career save percentages of .913 and .916. They are both excellent this year at .918 and .927.
Vladar is at .885 and .892.
Yeah, he's definitely not significantly better. He's letting in .84 more goals per game than Stolarz, and .45 more goals per game that Woll.
Stolarz has saved 9.3 goals above average, Woll 5.9, Vladar -2.5.

He would need to pass through waivers to be sent down.
And he's Calgary's back up of the future as well.

Yeah, I just listened to it. He didn't rip Cozens to shreds at all.
He questioned the Sabres signing long term deals with unproven players and suggested Cozens is more of a 20G centre as opposed to a 40G one.

Cozens wasn’t universally loved by his teammates in Lethbridge either. I’m not a fan of the idea of him as a Flame.

Probably safe to say that if Cozens was the guy they wanted, Flames would already have him. Buffalo has been open for business for a while.
I think the flames best opportunities are going to be moving seasoned gritty players to contenders or teams like Minnesota whose window has just opened. I’m thinking of guys like Kadri and Coleman. We probably get pics and prospects back. Maybe a guy like Rossi or Bourque could be had.
Then, there are the dumpster fire teams that seem to be giving up on young talented prospects. Buffalo and Anaheim fit this category. So then it becomes a question of how much and how quickly can you extract that talent from those teams before they put someone with common sense in charge? So here I’m thinking of guys like McTavish Zegras Helenius and Cozens.
Maybe it’s the old Viking in me, but I smell pillage.

Maybe.
The Sabres probably want too much in return for a guy who is making $7.1M that just hasn't been a very good player at the NHL level.
Honestly even if you're paying just the NJD 1st that might be an overpayment with the contract that he's on and his current performance, and the Sabres probably are asking for more than that is my guess.

Helenius is absolutely not going anywhere. Buffalo was after him before they knew where they were drafting, and probably would have taken him at 6 if they were there.

Buffalo was and maybe is still asking for the moon for Cozens, like 1st++ at this point.
Craig has interest, but he's not going to mortgage the future for Cozens at this point.

Buffalo is in such a weird spot right now.
I don't blame them for not wanting to sell low on their "Core" (Thompson, Tuch, Dahlin, Cozens, Peterka, Power, Mcleod), because they probably shouldn't be moving those guys.
But then at the same time they are hesitant to move any prospects or picks to try to help these guys win now.
I can get not wanting to move Helenius, or Benson because those guys have potential to be legitimate stars.
But to me they are way to hesitant to move on from pieces like Kulich, Rosen, Ostlund, Quinn, or Krebs. Or any of their future picks (the 2025 pick would have top 10 protection for sure).
Even if you're selling a bit low on a piece like that, if it's part of a package that brings in a piece that actually helps those core pieces become more effective players then it's a deal they should probably be making at this point to try to build a bit of a winning culture.
