I was in Kelowna, and I overheard these Cactus Club servers off shift, laughing about pulling in $100 an hour on average, or sometimes even hitting $1000 in a day, all in cash. It's insane, man. These servers are raking in 12-15K a month! They're making a freaking bag. And you know what really grinds my gears? Everywhere I go, there's this tip option staring me in the face.

You poor thing.
The fact that you are bothered by other people voluntarily giving servers money that doesn’t impact you at all should be a sign that you might want to do some personal reflection on why that is.
If you’d like to share how much you make I’m sure we can find someone who will be jealous and argue that you don’t deserve it either.

Cactus club doesn't accept cash do they? At least not here in Alberta.
Edit: just checked and they got rid of that dumb rule.

I do find it funny we don’t tip people who are on their feet all day working their rears off - grocery store cashiers , (historically) fast food workers , but have no issue tipping a server or bartender 15-20%.

Because they typically don’t serve you. They are there to take your money, it’s a one and done interaction. A server or bartender is serving you, in what should be many interactions during your evening, thyme can make or break your night. And a good one will engage in chit chat and small talk looong before they bring over the debit machine. It really GMG when the small talk STARTS at time of payment.
If I order at a counter and carry my food/ drink to my table I typically don’t tip in any restaurant. If I sit down and they bring everything to me thats when tipping takes place. Some places I tip rather generously (servers at the curling club, and golf course) as I see them several times a week, know them personally and understand that we need to tip them to keep them around.

In theory cashless transactions should be quicker. Additionally there is probably less risk, robbery and employee theft, and less work, ie. Cashing out at the end of a shift or day and bank runs, going cashless.

You missed 8% - because you suck but I want to cover tip out so you don’t lose money serving me
And no tip - The kitchen deserves the tip no the waiter but since I can’t directly tip the kitchen I’m tipping no one.
