I was going to say Evil Dead series when I saw MMF had Bubba Ho-Tep on his list. Great movies. If you haven't seen Bubba and like Evil Dead, pick it up and vice versa.
Have to also mention Blade Runner. The VHS release not the DVD director's release.

I am probably one of the few living males that hates Scarface with a passion. Except for the cool gunfight at the end it was just blagh.
Same with Blade Runner except there was no cool gunfight.

If you want to see a great mexican underground movie, try Amore Perros. Its about love, hate, friendship, betrayal...and dog fights.

Here's a couple i really liked........prolly not undergound or underated though
Matchstick Men........if you don't figure it out by the end its really good
Thirteen.........really a cool movie, about 13 year old girl radically changes after meeting a new "friend". Really a good movie
The Virgin Suicides........A really dark movie with a a real message for all you parents out there, immensly enjoyed it
Almost Famous.........prolly seen it by now but if you haven't watch it, it follows the 70's rock scene, nuff said

A couple I'd recommend:
Eternal Sunshine of the Spotless Mind - fascinating movie, I thought. Well shot, and one of Jim Carrey's best.
Vanilla Sky - some people said it's overrated but I love this movie.
The Usual Suspects - if you haven't already seen it
I also agree with Boondock Saints - Awesome movie!!
And I've wanted to see Clay Pigeons for a while
On that note - Swingers is good too

Yeah, Amores Perros was good.
And I'm surprised you thought Y Tu Mama Tambien was horrible. Maybe we have different tastes, but I haven't seen a movie that depicted sex/lust, and the process of discovering it, in a more frank and honest way. I thought it was a wonderful little movie.
You should check out City of God if you haven't already, especially since you mentioned Amores Perros.
Great picks everybody, rented "Man Bites Dog" tonight, and will probably watch it tomorrow night. I had heard about it for a while, and with the new Criterion DVD version out, I figured I had better see it. Ready for some ultra violence.
Here's a few more I scrounged up from my list at imdb.com:
Dr. Strangelove - A sorta obvious one, but the new special edition is AWESOME, and it is still timeless as ever. Brilliant film.
Owning Mahowney - Based on a true story about a Canadian banker and his million dollar embezzlement scheme, Philip Seymour Haffman is fascinating as the lead character.
The Man Who Wasn't There - Underrated film noir-type thriller by the Coen brothers. Dazzling b & w cinematography- probably (and sadly) the reason why this film kind of slipped through the mainstream. Some of you old fogeys out there would probably appreciate and enjoy this one.
Wonder Boys - Quirky comedy/drama about an aging college professor and a couple of his students, among other things. Good cast, and well done.
Young Frankenstein - Many think Blazing Saddles is Mel Brooks' best comedy, but I like YF. The first time I saw it, I remember thinking, why aren't any new comedies this funny?

Yes, I have seen City of God and liked it too.
As for Y tu mama tambien, you are probably right. I dont particularly like little wonderful movies. But it is just my taste, thats why I said I thought the movie was horrible, not that the movie was horrible. Who likes that particular genre might have enjoyed it. Same with Life as a house.

The Believer -- Movie about a Jewish Nazi. I thought it was pretty good.
Rounders is another good one. Matt damon, John Malkovich, Edward Norton.
Didn't notice this one mentioned as well, but Snatch is pretty funny as well.
