My uncle was fairly far gone down the dementia path when I got to know him. But he was remarkably interesting. Nuclear engineer who went to India to help set up their CANDU reactors, then Pakistan. He was a sailor, university prof. He was incredibly well-read and had a million stories. And he was the most humble and genuine guy who was always present in the moment. I'd pick him.
OP needs to add more parameters. Dead or alive person, do you go back to their time period or they come to our time period, are they happy to be there with you or forced, who is paying, etc.
I'd like to have lunch with Jesus at a steakhouse in 2023, but not sure I'd like to go to Nazareth in 33AD...

I would not pick someone famous because I don't have an actual connection to them. Honestly, I would pick a CP BBQ to actually meet so many of you I interact on this board daily for years. That would be awesome!
