Juuse Saros is shorter than Wolf and is a top 5 goalie in the League. I have no worries about Wolf's size.

Same here. And I actually have more faith in smaller goalies. They've never coasted on size.

Except the league history is littered with small goalies who just hit the wall at the NHL level. Good small goalies like Saros are very much the exception to the rule.

My point is, there are always stories about up and coming small goalies who are going to be an exception, but it’s really rare for it to happen.

Hard to find a definitive source but 6'2" - 6'3" is roughly the average for NHL goalies. A short goalie in the NHl today is 5'11" with that in mind 6' is well within reason.
Consistency is the only goalie stat I care for.

Oh, I agree, Wolf isn’t some tiny Pang-like goalie.
I do think the average for starters is edging up.
