The league has postponed 40 games in the last 7 days.

Hmm..QC population is ~8 million. 85% vaxxed with at least 1 dose. That leaves 1.2 million unvaxxed in any form. Even a SMALL outbreak among a population that size will overwhelm capacities everywhere. That is the issue that concerns public health officials (assuming I understand correctly).
Addition: I would also guess that numbers are similar to that all over, plus or minus a few percent, based on populations.

Are the Oilers sick enough for SN broadcasters to push for a league wide pause yet? I guess I will have to wait til the next Flames broadcast to find out from Cassie lo,

We don't know the actual impact on the players yet; Brandon Sutter had covid last year (gamma) recovered for eight games but hasn't played since, all due to Covid19.
