If coronato signs with the Flames after the end of his Harvard season, is he eligible to play this season and in the playoffs?

I think it depends on when Harvard's season is over, but, yes.

With this year's schedule being pushed back due to the Olympic break, the latest Harvard's season could go is still three weeks before the end of the NHL regular season. The Frozen Four final is scheduled for April 9, and the Flames' final regular season game is April 29.
If Harvard doesn't make the Frozen Four, it's possible he could sign and play the final month of the season or more. Although, if he plays fewer than 10 games, his contract could slide for a year because of his age.

I like that he has a prolific linemate, but I would really like to see Coronato without Farrell for an extended period.

Can he play playoffs without being on the reserve list at the trade deadline?

Because he was drafted by the Flames, he is on their reserve list. That's only an issue for the undrafted players who sign as free agents out of college.

Because I have mentioned it twice? I am not sure what counts as obsession in your world but I believe that frequency would put you in the obsessed with McDavid category.
For a top prospect, I don't think it's a strange thing to hope that you get to see them separated from their extremely high scoring offensive linemate that they've been paired with for multiple of their best seasons. If we want to know what Coronato's overall offensive potential is we need a better idea of what he is capable of when he's less comfortable.

I think playing with prolific scorers is good for development.
Mangiapane played with LeBanc in junior, Tkachuk played with Marner in junior, and it was good for the development of both these guys.
If anything learning to play with high end skill is a tough adjustment when you hit the majors.
The teams themselves don't care about scoring totals, but rather process. Creating chances, playing with pace, getting open etc. Some of those skills don't develop playing with less skilled players.

I agree, otherwise you get players who learn to light it up as individuals, and that doesn't work for most players when they hit the NHL.

Sure, but I think we already have a pretty good read on how Farrell and Coronato compare, and it really does not look at all like Farrell is the one doing the heavy lifting here:
Matt Coronato played only two years in the USHL for his 17- and 18-year-old seasons. Sean Farrell played for two years on the USNDT, and then played his 18- and 19-year-old seasons for the one and only USHL team that Coronato did. Prior to his arrival in Chicago, and prior to being paired with Coronato Farrell was a 0.7 pts/GP player, and consistently slotted in the middle of his team's scoring leaderboard. In his 18-year-old season he scored 15 goals and 56 points in 44 GP. The following year—as a 19-year-old—he scored 29 and 101 in 53 GP.
Coronato scored 18 goals and 40 points in 45 GP as an USHL rookie, and placed in the top-six of his team's scoring as a 17-year-old—the fourth-youngest regular on the team. The following year, in his 18-year-old season, he exploded for 48 goals and 85 points in 51 GP. When you compare this season to Sean Farrell's production at the same age, and for the same team, there is a huge gap of 33 goals and 29 points in Coronato's favour.
If you look closely, I think it is fair to say that Coronato is objectively a better player than Farrell, which would then explain why one was drafted in the top-half of the first round, while the other was a fourth round selection.
