It would be a hell of a risk, unless you already know Eichel won't be able to play during the regular season.

Or maybe he just happens to be ready just in time for playoffs.
Has that ever happened before?

I would guess any trade for Eichel involves salary going the other way.
Nobody can take a $10.5M ticket for prospects and picks alone.

It happened last year with Kucherov, but just because his own timeline for rehab happened to coincide with the end of the season/start of the playoffs, that does not mean that teams can simply set a date on their own that is most convenient for them. We already know how long Eichel's rehab will take with the disc-replacement surgery—I believe it is two or three months. A team could theoretically make a trade for him in mid-to-late January, and then effectively do this. But what a team cannot do is opt for a player to have surgery, and then set their own timeline for his return.

Taking a while to get to 5000

Aljamain Sterling, UFC fighter who had the surgery Eichel wants, has had to delay his comeback due to "lingering neck issues"
Sort of related in that this may be used to examine how this sort of surgery holds up under physical stress.
If interested (paywall)

The question is… can you kick the cap overage down the line by him being on LTIR when he comes in and then get compliant by trading away roster players before he is ready to return mid season.

I dunno. Experimental spine surgery is pretty serious. Case could be made for a long precautionary rehab.

Not by the team, it couldn't. And the surgery itself is not experimental; thousands of these procedures are performed every year.

Maybe there's a setback that results in a doctor's Ferrari.
