				 I need a set of knives for my specific skill set 
 
			
			Some of you know I'm big into smoked meats, now it's time to invest in a quality set of knives for trimming and basic butchering. What brands do you use and where are they sold?
 I dont know how to sharpen knives with a whetstone yet but thats something id also like to learn.

Obviously a personal choice, but here's a few I have:

It looks like they're sold out right now but they get stock in every once in a while. I also have some Fusion Morimotos that are my second most used knives, largely because of how much I like the handle:

Those ones are kind of tough to find now, I think, but if you can get the rocking santoku it's an excellent knife that I use a lot for heavier veg (carrot, potato) and things like parsley and cilantro.

+1000000 times this. I learned to sharpen with a whetstone after an incident with my best knife and some solid pig skin.

			BBQ enthusiast for years. Do most of my butchering and trimming and the best purchase was a Honesuki.
 It so easily breaks down a whole chicken and is perfect for trimming away annoying silver skin.
 
 Just get a Honesuki.

Are they running them again? They had cancelled when Covid started. I managed to get in on the last sharpening class they held here, but missed my knife skills class. 
 
They're posting a bunch of lessons to their youtube page and they're almost as good as the class.

			I bought these cheap knifes  about 2 years ago with not much expectations as I just wanted some sharp knifes for the kitchen but I have to say for the money they are awesome, by far the sharpest knifes I ever had and they stay sharp, they're surprisingly very solid as well.

I guess the retail side of this is now called High Calibre Products.  Get yourself a Victorianox curved 6" boning knife, a 6" inch straight boning knife and a 10" Scimitar steak knife. These will be the only knives you need.  Worked as a butcher/ meat cutter for 10 years and these are the tools of the trade.
 
  Pick yourself up a steel as well, practice with some of your kitchen knives on the steel.  I learned to use the steel a bit differently then most would teach in order to keep the one edge from rolling.  Learn how to use a steel effectively, if your edge is not/ stay aligned, it doesn't matter how sharp you can get your knife.
