If you're in Vancouver, I would contact some of the farms that sell animals in whole/quarters. I know when we ordered a half cow, you could pay extra for entrails and organs. Most people don't want that stuff, so the butchers tend to have lots of it.
Also, if you can find an Asian butcher that you can communicate with, that's an option too. Tripe and other organs are used pretty commonly in various forms of Asian cuisine.
