I actually liked 2K7 much more. NHL 07 is really neat, and the new style is interesting... but the overall game still doesn't feel like hockey to me.
2K7 feels like real hockey to me.
Then again, I'm probably in the minority.
Try renting both.

*IF* you have an Xbox 360, get NHL 07. I'm about the biggest EA-hater you'll ever meet, so this is high-praise indeed coming from me. NHL 07 is the closest to "real" hockey I've ever seen. Gone are the comical arcade-like over-the-top hits, and I've found dozens of different ways to score; the goalies (finally!) aren't supermen who are progreammed to stop everything except the same one or two plays.
If you don't have a 360 (your OP says you have a PS2, but this is for the benefit of other readers), I'd go with 2k7.
Of course, you can always do what Anthony said and rent them both.

I've bought 2K games in the past, and have played the demo for 2K7. I don't like them, I think they are horrible when compared to EA.
EA is the only hockey game I'll ever buy, I just wish they still had the MLB deal.

If you have a 360, NHL 07. NHL 2k7 is so very dry now, I played 2k to death for up until 2k6 and the leap from 2k6 to 2k7 is extremely small.
NHL 07 360 though it lacks in features and overall polish is extremely fun, but I do get the odd game of 2k7 in, It's just a boring game to play. IMO, especially if you've played alot of 2k games in the past.
edit:: I just read you have PS2... stay far away from that version of NHL 07. Get NHL 2k7. I got the Old Gen Version for free and haven't played a full game in it yet.

I wish both games would clean up their franchise modes. They're a total joke after a couple of seasons, you can get great young players to sign for like 600k for 7 years... its so easy my buddies and i have to impose a cap of like 22 million for our teams because you can get players to sign so cheaply for really long terms.

Like everyone else has said, 07 for the 360.
I think my biggest beef with the 07 for the PS2 in particular is that in the create a player area you get the worst choice in play by play names. Why would I want to name Evgeni Malkin "Freight Train" or "The Count" it's completely ridiculous. That was always a big plus for me in the 2k series, all the players names were seperated into first and last and there were a ton to chose from.

You can name Malkin "the Count"?? Haha, that's hysterical..really makes the decision easy.
