Cooking anything sous vide will change your life. I have ruined going to other peoples houses for steak now forever. Buy a 3 dollar steak and eat like a king with this thing!
Anova Sous Vide is the real deal do yourself a favor and buy one

Lava Dining in Kensington used to make a 10 oz Wagyu burger cooked sous vide and it absolutely obliterated all competition for best burger in the city, with the possible exception of Naina's at the time. Unfortunately it's gone now, but trust me, it's amazing.

Ground up your own chuck. Cook it too your desired temperature (you can do medium rare this way) Do a quick sear and enjoy! You will feel like at a fancy Gordon Ramsey Burger Restaurant in Vegas

Do you need the vacuum sealer? or can a straw and a ziploc bag substitute?
Their site mentions, that the ziploc bag and straw trick is not recommended for meat.

I don't even use a straw. I just use freezer ziplock bags and submerge it in the water to push the air out. I have never had any issues this way. I haven't tried any 24-36 hour cooks yet but from what I have read the submersion method works quite well.
I also clip the top of the ziplock bag to the container to avoid the risk of it opening in the water.

Depends on your preference I find the sweet spot to be around 2 hours. If I am cooking from frozen I thaw the steak in the water as it heats up then season and put back in for 1.5 hours and it turns out great.
I then sear it in brown butter (burnt butter) for 30/45 seconds a side.

Just guessing, as I've never used one before, but I imagine Wi-Fi would allow you set it up in the morning and then start it remotely so it'd be ready when you get home.
