Why rely on an official 40 yards away to determine if a runner has crossed the goal line or not and then not rely on video to get the correct call?

Because the timeout is more valuable than a challenge with a low likelihood of succeeding. Especially when you should be able to score from the one yard line even with only one chance at it.

I meant the league, not the coach. There should be a official in the middle to watch the runner. The umpire is there but watching for something else, not a ball carrier and the goalline. The line judges are 40 yds away and do not have a good view of the actual play they are responsible for calling.

I'm torn between my urge to see the Patriots lose vs seeing sad Sherman face. It's like watching Alien vs Predator, whoever wins we lose.
