You want inspired? The Colorado Avalanche held a 'fan poll' to name their team when it moved from Winnipeg. If you're up for it google the results of that.
At some point you just ignore what others want and pick something simple.

I actually like Silver Knights. Doesn't sound ridiculous like Desert Knights, Nevada is the Silver State, has subtle references to gambling.

A two word team name is awkward sounding enough. What makes it worse in my opinion is the fact that it's attached to a two word city name as well.
"Las Vegas Silver Knights" - sounds horrible.
If they use Nevada instead of Las Vegas, it sounds much better.
"Nevada Silver Knights" - sounds much less horrible.
