I like that stuff also. I think its a good price and good charcoal. The BGE stuff is good as well, but for the extra price I didn't notice a big enough difference.

This Costco bbq cover, is it heavy? I kinda want one that's lightweight. Home Depot has one that I might get

It weighs about the same as every other BBQ cover I've ever Dealt with, couple of pounds.

Damn, mine must not be sealed properly. I bet I have the bottom open the width of your pinky and can keep it at 225-250...but I leave the top vent almost wide open. I've snuffed a few cooks because it just such a small port. But any time I want it a bit warmer (275+) it holds rock steady.

I'm gonna head over to BBQ Galore and see if they have a temp controller. Ever tried one??

I haven't but what I want that I can't really justify is the BBQ Guru. I can't remember how many hundreds of dollars the Cadillac-version is, but that would be awesome. You on the other hand should buy one and post about it so I can live vicariously through someone because I'm far too cheap to buy one!

So I was looking at Grills at Costco, is the Grill Chef a sub company of Napoleon? Their cheaper brand? Also we have the natural gas hook up, what is the benefit to going NG over propane besides not having to fill up the tank? And apparently it looks like maybe the price?

Natural gas is cheaper to run than propane, and you don't have the hassle of having to go fill up your tank all the time. That's all I can think of.

Natural gas doesn't burn as hot. Biggest drawback, thoguh I don't think it as big an issue on newer BBQ's.

Yeah, a proper BBQ should produce the same amount of heat regardless of propane or nat gas. But part of that is due to different burners/regulator used in natural gas BBQs.

Natural gas is for sissy's. Running out of propane halfway through a cook and everyone being too drunk to drive to the gas station is part of the great Canadian BBQ experience.

The grill rack itself? A cup of ammonia, a garbage bag and 24 hours in the sun.

The Costco grill selection wasn't very impressive, only a few grills. They had a 2 burner Napoleon but we like to entertain and I am not sure it would be big enough. If one does not live in a city with that awesome BBQ store everyone is talking about, where would one look? Home Depot? Trail Appliances?

So I was drunk at a silent auction last week and found myself winning a smoker.

Awesome. I didn't know I wanted a smoker, but here we are.

Anyone else have a smoker? Any tips on where to start? I know nothing about smokers other than I want to make some kick ass ribs.

I have an electric smoker. It's nice because it takes the guesswork out of temperature control.

Ribs are one of the best things to smoke. If you like fall off the bone ribs (baby back) look up the 3-2-1 method.

Why clean it? Most food should burn off it or scrubbed and stubborn grime can be cleaned with a slurry of kosher salt and then re oiled with vegetable oil and heated. You don't want to remove years worth of seasoning (polymerized oils) from the cast iron. Ammonia, that's crazy.
