Is there a difference between pickled and dilled?

Dill carrots are the greatest thing in my life, and only slightly ahead of dill pickles.

But anything else pickled gets a large thumbs down from me.

I think the dill is just a flavouring, like garlic.

Dill is a herb and pickling is a method of food preservation.

So everything dill is pickled, but not the other way around? So what is the "flavor" of things that are just pickled without an herb? Just vinegar?

I think a plain pickling liquid would just be vinegar and maybe some sugar, so it's not too tart. For additional flavour, you can add stuff like dill, peppercorns or garlic. You can use dill with some fish and chicken dishes, but they're not pickled. It would be like using rosemary when preparing beef or lamb.

Well, not everything with dill is pickled either. Fresh dill works great in mashed potatoes for example.

As for your second question, it depends. There are endless amounts of herbs and spices that can be used in pickling. Some examples off the top of my head are peppercorns, allspice, mustard seeds, chillies, coriander, cumin, cardamom, cloves, star anise, turmeric. With the amount of ways you can pickle and the amount of foods that can be pickled it's kind of funny that cucumbers got the title of "pickles". Here in NZ and I'm not sure what other countries they're usually called gherkins.

I love quick pickling things. Some vinegar, water, dill, sugar, salt and pepper with sliced cucumber in the fridge for an hour is an awesome pre-dinner snack, or salad like dish.

Quick pickled jalapeno slices are awesome too. Slice 'em super fine on a mandolin with vinegar, a little salt and sugar and leave for an hour or more. Great on nachos, burritos etc.

Ok, well I know what dill is and how it can be used for many things. I meant more in conduction with the "pickled things" scenario.

So, for the egg situation, what is a pickled egg? A few love em, a few hate em, but it seems to me there is a whole host of flavors that can be applied to said egg.

For example, I love dill pickles, and hate pretty much every other type of pickles. So if I say I love pickles, someone may confuse that with sweet pickles or something and say "sweet pickles are gross!"

So, what is a pickled egg? Garlic? Dill? Onion? Sweet? What?

What are your thoughts on the pickled ginger at sushi restaurants? That's usually just ginger, rice vinegar and sugar I believe.

Other pickled foods... (There are varied recipes)

Basic Kimchi I believe is cabbage, salt, garlic, ginger, sugar, pepper flakes, radish and scallions.

A basic pickled apples recipe I saw was apple, vinegar, sugar, salt, black pepper and coriander.

Asian pickled cucumber is rice vinegar, sugar, soy sauce, fish sauce and crushed red pepper.

Not all pickles have Dill. Dill Weed can be added fresh to food, not just pickles/pickled.

Sigh. OK, I know that Dill is an herb, that can be used in many things pickled or not. I was using "Dill" as a proxy for "pickled with dill (ala pickles or carrots).

Your notes about the ginger and kimchi etc.. help. But what in the bloody hell is a pickled egg? It seems to me there are infinite combinations of flavours that can be applied to something being pickled, so just saying "I hate/love pickled eggs" makes no sense.

"Pickles" = Pickling + cucumber
Pickled X = Pickling + X

I've seen pickled egg, onions, radish, carrots, potatoes etc.

I guess in some senses, pickling is a method to "modify food for consumption" in the same sense that you can sear a bunch of different foods on a pan, or boiling different foods in hot water?

Pickling is just the process of preserving food with vinegar and salt or sugar. Whatever you add to it is just flavour.

Pickles = Pickling + cucumber. But what you use in the pickoing (dill, garlic, etc..) is what actually affects the flavor.

If I say I love pickles, most people would ask what kind.

I love pickled carrots, but only dill pickled carrots.

So to say that you like pickled eggs leaves a large caveat for the type of flavors being used. Some may love dill pickled eggs (I believe these are called deviled eggs), but hate all other types of pickled eggs.

So again, to say you love/hate pickled eggs, to me makes no sense. No more sense than to say I love pickles. Well, what kind of pickles?

Pretty much. Probably just salt though. You only use sugar for sweet pickling. It seems like most of the pickled eggs they have in the bar are vinegar/salt.
