I liked the 03-04 jersey but kind of like having a jersey that defines the team at the time and would rather not go back to what we used in 03/04 or our 80's jersey as our primary (I will say that BC-Chris's iteration of the 80's jersey should be the permanent 3rd jersey though).
80's - Stanley Cup Era
Pedestal - Young Gun Era
Chevron - Iggy Prime Era
Flags - Underachieving Era
???- Wouldn't mind something new for the Monahan/Gaudreau/Bennett era of this team

I don't like the current style at all. I think the Flames were one of 11 or so teams that listened to the silly requirements from Reebok and then were too far down the road under those rules to change up when the original six and others said screw it we're going our own way.
Now 10 years later and we still have the Reebok pushed redesign that's fugly.

While I agree in general, the Flames came out better then few teams. The Leafs and Oilers basically had plain practice jerseys for a few years there with no stripes.
With the NHL rules on changing jerseys, the manufacturers, and now pending change in manufacturers, and the of course the appetite for the team wanting to make changes, a lot of factors.
The Horsehead design evolved first into a new white jersey,and they had a Black and White jersey only for a few years. Then into the primary 2003- 2004, with the Chevron stripes. I can see the current third evolve into a Black 3rd with the shoulder crest on the chest, and have the white and reds look similar to the above with the C on the chest.
That's about as radical a change as I can see from the Flames, until they move into a new building and switch it all up. (and/or play the last season in the Saddledome all in retros)

at the risk of pulling an old scab off, I don't know why the Flames don't just do what the Oilers have done and bring back the full 1980s package.

My guess is for some reason they want keep black as part of the set as introduced in 1995.
Pants or helmets or gloves, whatever, they'd rather have black than red. Then you have to have black as trim on a jersey to match etc.
Easy answer is to have an all black set as a third, and then no black at all in the home and away sets,, but then you've got two sets of pants and gloves and home helmets etc.
That's probably an issue for the equipment guys, though that was what happened when they used retros the last few years.
Oilers never had black as a trim color so it was easier to go back, and they use the same pants and gloves, for example, for all 3 sets.
