It's not like there's never been a black guy with a lightsaber before, unless they're also ignoring the prequels. For that matter the clones weren't white.
I don't think the people were mad about the black storm trooper because they are racist (maybe a few are). I think it's more because storm troopers were all clones of the same Kiwi guy, so people are confused. It's pretty easy to explain away though. Either he's just posing as a storm trooper, or they ran out of clones.

It's not canon anymore, but in the old EU around ANH the Empire had begun to supplement the Stormtrooper ranks with clones. Due to things such as the advanced aging of the clones.
This may almost be canon, as Lucas re dubbed Boba Fett in later releases with Temuera Morrison, but not the Stormtroopers.

They've hinted at it in Rebels which is considered Canon as Sabine talks about training at the Imperial Academy.
As well they had an episode featuring a cadet training facility where they were looking for Stormtrooper candidates.
They've also had storm troopers with different voices, including the dearly departed surfer dude storm trooper.

So with the new movie coming, I'm getting the itch to re-watch the originals (Ep 4-6). Question is, what is the best way to watch these movies now? I know there has been special edition after special edition, but I really hate the stupid things Lucas did to alter the originals ( Han/Gredo shooting, etc). But I want to watch them in high quality, which those altered versions would provide.
What should I do?

Best I've heard (and done) is episode 4,5,2,3,6. You don't even really need to watch 1 but if you do, do it after 5.
This way you get the Vader/Skywalker reveal and then it jumps back to the clone wars as almost a flashback of Darth Vader. And then when he turns at the end of 3, it really punches home his return in ROTJ. It's pretty great this way.
