It's the peaked part of the roof. I built a 6' x 20' platform up there for storage, which is why I called it an attic, but it's nothing elaborate.
I think because of the vinyl walls my garage is sealed up more than a typical garage.

Ok, just making sure we are on the same page.
Ya, I don't think I've seen that kind of effort to seal up a garage and certainly contributing to moisture being trapped.
Here's a thought, are your soffits open? You should approach that the same way as the soffits on your house. That's where you get your incoming air.

I thought I heard somewhere that large dogs are good for humidity as well. Something to do with opening the garage when taking the dog for a walk...

Silver, I had the exact same problem, and the issue is almost non existent with the through-the-wall fan. I'm telling yah. Broan 509 and a humidistat. I think it was $120 with shipping, one hole to cut in the wall, and about 20 minutes of install and wiring.
My tools used to rust up real bad, no issues anymore.

Okay, I'm going to start there. I'll get a through-wall fan and humidistat.

I'm also going to get a powered vent for the roof, though, just to cover all my bases.
If I need to vent the soffits, I'll do that, but I'm not going to hit that right out of the gates.

To be honest I think you are approaching this problem wrong. You are fighting the symptom not the disease.
While your plan might reduce the increased humidty, increaseing the venting in the garage will eliminate it.

The dehumidistat I used is actually made for attic fans. Depending on the load of the fans, you could run both off one controller.

I would be surprised if you didn't have the vents. Perhaps they look something like this.
I would start with just the in wall vent and see how it goes from there. Easier to try one thing at a time and troubleshoot from there. Is your attic insulated?

Yes, attic is insulated.
There definitely isn't any venting in the soffits. It was built in 1969 and they're made of wood.

It would certainly be a hell of a lot better than what you have now. If it was me, I'd start with 4, 2 on either side but space them in such a way that you could add 1 more on each side if need be in between the 2 you already did.
But I think 4 should get the job done no problem for a 2 car garage.
