Both look like great options, but if you could only pick one, who would you take and why? Would be interested to hear some different perspectives; keep in mind that long term is better -- i.e. assuming everything else is equal (they virtually are), the tenant who might stay 3+ years is preferable to the one that may only stay 1 or 2...

I'd beg to differ, and this is why:
Couple "A" are younger, you say HE has a good stable job, no mention of hers. This means, they likely are mature, and he is doing everything he can to provide for his family, however, it will be a struggle for them for the next few years (been there, done that, don't let it frighten you as a renter, as the most important thing to him right now will be food and shelter) and they likely won't be in the real estate market for several years.
Couple B are early 30's, both working, no children I assume? I'd say this couple is far, far more likely to be closing in on a down payment to buy a home of their own.

Screw that. I'm 31, I'm in better shape with more energy than anytime in my 20's, and now I can afford to do all the cool #### that I couldn't back then. Plus I can still drink any of the 20-somethings I know under the table, so until that changes I won't consider myself old
Although I do hate most of the music they listen to, so that probably deducts some points

I'm 31 as well and can hold my own against 20-somethings who don't know how to handle their body just yet.
Plus I'm eating healthier, working out more, and am being taken with more respect in my career than when I was in my 20s. Wouldn't really change it for much.
I'd rent to the 30-somethings!

But is a few years worth of baby damage, worth it compared to couple B? And although he has a stable job, 1st born baby years can suck a lot of money out of him and things might not be as stable.
The keyword that sold me on couple B was "conscientious". It's harder to find people like that who respect your property and make sure they pay their rent on time.
I dont know the demographics but couple B is a harder find, even if you're only going to have them for just 1 year

The OP is looking for a long term tenant, and as a 29 year old father of a 4 and a half year old, I'd have to say the last 5 years, as a renter, were the years I needed the most stability. As such, my priorities were food and shelter for my family. Now, nearing 30, I am in the buyers market, so maybe it's out of bias from my own experience that I believe the younger couple with the baby on the way would likely be a better candidate for long term tenancy than an early 30's couple, with dual income.
As far as baby damage goes, I'm not sure what you are referring too, so long as you don't let a child play with hammers in the home, they usually aren't strong enough to cause damage to a home, outside of the standard messes, that can easily be cleaned.
And as you pointed out, couple B is likely harder to find, so if you want long term tenants, who want to be there, why rent to couple B, only to have to be on the hunt again for another couple B 11 months from now?

No concerns about paying rent on time -- both A and B have good, stable rental histories, and are moving for valid reasons. Oh and I wouldn't be surprised if B has a kid soon -- Mr B makes less than Mr A for what it's worth from an income and future house buying perspective...
