Your examples involve people who have committed the crime and are regretting their choices. They've either stopped and are trying to go on the road to recovery. Jamie Oliver on the other hand continues to gain weight while pushing people to eat healthy. He's making his own situation worse

Dude, you sound like a hurt man who is jaded from trying over and over again to be healthy with no results, therefore, you're projecting a bunch of your own anger and mistrust on a man who doesn't deserve it.
You need to look in the mirror and seriously assess where this is coming from. You seem to be the only one on here pushing this particular narrative, so that should tell you something. I hope you find a way to get past whatever it is that hurt you. Sincerely.

If you ever look at Jamie's recipes most of them are relatively low in fat and good calories per serving. He almost always substitutes thing like sour cream for low fat plain yogurt.
As for cooking with full fat cream, milk, etc.. That's basically a requirement for anything using milk or cream in a sauce. Lower fat dairy will split if you try to use them in cooking.
