Default [Split] Nano sim card for upcoming Europe trip

I am thinking of using my Unlocked iPhone 5 in Europe by buying pre-paid sim cards as needed. I would like to be able to use voice/text and data. Here are some basic questions I have:

Can I buy one SIM card that I can use for my entire trip covering France, Turkey and Amsterdam? or will I have to buy them as I go along and move from country to country?

Any other SIM card related things I should know? Thank you.

My sister-in-law lived in Austria for 1 year of high school and had to swap out SIM cards on her way to/from school, which was located just inside Germany.

I suspect you might need one for each country, but I am totally guessing based on that story. You would just have to Google phone providers and try and find one that covered all 3 countries.
