Authentic Chinese cuisine is very region dependant as well, with different areas having different prominent flavours and textures.

I think the best place for authentic Chinese cuisine that sort of removes the unappetizing aspects of it, is Richmond, BC. Some awesome Sichuan restaurants there, although my dining experiences in Chengdu were the best that I had during my visits to China

What? It's exactly the opposite of that. The Chinese food in Canada is always gooey. Food in China is generally much less gooey, though probably more oily.

Worst food I have had was canned dog food. It was left for us as a joke in a cache for setting up camp on an icefield in Alaska. We thought, jokes on them lets crack open the emergency food and take a bite. It wasn't the taste so much as the texture of bone splinters in mush.
While I was up there I became quite fond of spam, and in particular spam bugers. Spam sliced thinly and fried with cheese put on pilot bread, mmmm salty.
A close second for worst food ever eaten is hakarel. It really does taste and smell like urine, and hangover urine at that. If I hadn't tried it in such a beautiful location (sitting in a stream that is the temperature of a hot tub) it would probably be making a strong case for worst food ever tasted.

Interesting thread:
Jamaican patties - when I was little (around 5 or 6) we went to Chinatown and bought one because I was hungry. Later that night we had tickets to the Leafs game through none other than Steve Stavro, but I enjoyed the game in the mens washroom barfing in the trough style urinals at the old MLG. I still don't touch patties to this day.
Anything giggly - almost any Chinese food which isn't cooked properly and require 30 bites before going down, will not go down by throat. I actually gag the second fatty stuff hit my tongue. My bacon has to be fried crisp before downing.
Old beer - I dare anyone to even take a sniff of it without throwing up.

I really want to know what Chinese food you're eating that always has a goopy texture?
Also you can't just say "Chinese Food" as it can be separated into northern, southern, eastern, etc., and further sub divded into shanghai, sichuan, hakka, cantonese, yunnan, xinjiang, etc. with varying flavours, cooking style, ingredients, etc.

I tried this stuff at my hotel in London. Holy cow, it's putrid! Some Brits love it, but I could only gulp down half a teaspoon. Marmite is grosssss!

Or you order chicken, and when it comes to the table, it's an entire chicken that looks like it was hacked to death by a blind samurai.
We're talking feet, head, knuckle joints, all filled with razor sharp bone fragments. It's like they mashed the chicken up with a tenderizing mallet.
Some of the food was so amazing, and tasty, and some was just so bizarre, and seemingly prepared with no care whatsoever.
I always got a kick out of eating with vegetarians. It seemed like the Chinese always had to slip a giant chunk of pork into a dish whenever someone specified no meat.
