You've obviously never worked in a restaurant. It's unsustainable: awful hours, bizarre drug-addicted co-workers, constant disrespect, zero worker's rights, etc..

I have worked at restaurants, several of them, all for significantly, laughably less than that!

The sad thing is, male waiters are almost universally better at their jobs. Maybe it's because they realize they have to earn their tips with friendly, knowledgeable efficient service rather than simply showing up to work in something low cut.

It's unsustainable. And no, I don't overstate how good it was. I used to keep records in case I needed them.

The hours are crazy, can't have a normal life, can't have a family, or accomplish anything more than being a really good server in that lifestyle.

I get within range of that number if I plug in all days of a month as work days plus working 10 hour days ($10/hour)
I worked at Denny's for about 2 years. I kept strict track of my tips and my average tip/hour over that time was $13. Add that to the $8.90 min wage at the time and bam, over 3k/month take home only working 36hours/week.

I'm a dude and wasn't even that friendly. Just got people's orders quick and right. It really isn't that hard to make 3+k. My brother worked the same job and is a lot friendlier guy, his average was over $16/hour in just tips.

You're going to have to drop the arrogance about the perceived understanding you think you have of western culture and society. Even if you think you know, you're wrong. You need to start approaching your attitude with a little more humbleness, or you're going to have a very, very big shock when you get here.

The differences between East and West China, rural and urban, ect. ect. has no bearing to what culture is in North America.
