Just out of curiosity, is there any way to tell when the next beta phase will be?
The last phase I got hosed on due to my schedule and got only 4 - 1 hour games in, I would like to kind of rearrange things in advance so I can really get some time in.

Of course. It will be brief, just 24 hours, because all they want to do is stress the servers and get a bit of additional feedback.

The holdup on Mac is actually Origin. Origin is still in alpha for Mac and is not widely available yet. This is also what will push back the release of the full SimCity game for Mac into the spring.

...and this is no longer true. The full version of Origin was released today for Mac.

Yup, it is the headquarters for Dr. Vu (significant boost to high tech industry in a city) and Maxis Man (significant boost to crime fighting in a city). The superhero/villain also cause mayhem as seen in the video.

regarding the city size, couldn't you just start an offline game, take control of an entire region, and make one big metropolitan area? all industrial in one map, all commercial in another, one region for suburbs, etc

I could be wrong, but I don't think zoning demand can be split among multiple cities. I would think that you would need all 3 within 1 region.
Services seem to be the only things affected by other regions.

Except each region is separated by huge gaps of nothing. Islands in the grass.
I could be wrong, but I don't think zoning demand can be split among multiple cities. I would think that you would need all 3 within 1 region.

Nope. One of the beautiful things about this game. You can create a city that is entirely industrial (optionally with coal mines or oil rigs everywhere). Then you can create a residential haven with lots of parks, schools, a university, hospitals, etc. Then a commercial city with massive high-rises and maybe a thriving trading empire.
All that is required as that the cities are connected on the region map. Yours sims will commute to work.

Each city site in a region is separated by some distance, yes. The distance is variable, not all city sites are far apart but none are right beside each other.
This had to do with visuals. The city that is not currently being played by the player, placed directly beside the city that is active apparently looked pretty bad (not as much rendering, no activity). If it is off in the distance that is not a problem.
does the RCI meters reflect this? if there is a ton of industry in one city but none in the one i'm currently controlling, will it still show demand being high?
