Seriosuly, how about giving Spielberg the shot he was supposed to get in Return of the Jedi? I've honestly wondered how much better Jedi would have been if he was directing instead of the nobody who ended up directing it.
I'd rather they go with someone whose at the top of their game now, or an up and coming talent then a guy who would cast Shia Lebouf as Luke Skywalker.

Better wait and see if Lincoln is any good...... considering Daniel Day Lewis is in it, my expectations are sky high. If Speilberg fails us on that one, then I would agree with your assertion.
However, it must be noted that he directed two movies last year (TinTin and War Horse), and while they weren't spectacular, they both were pretty good for what my expecations were at least.

He's got a great visual sense, values story and dialogue, and had a long on-again, off-again flirtation with Rendezvous With Rama so you know he has an interest in space sci-fi.
At worst I hope they get someone like a Nolan/Spielberg/Jackson to produce and oversee the production. That way they would be able to watch over the entire project in case something goes wrong during production.
Another couple names I would suggest would be either Guillermo del Toro who was supposed to helm The Hobbit during pre-production, or possbily Joss Whedon might be a remote possibility since he's already on Marvel's payroll. Even someone like Jon Favreau is still on good terms with Disney, and might be capable of directing a Star Wars movie.
Just whoever they choose, please don't let it be someone like Michael Bay!
Would Nolan be interested in tying himself up in another decade long trilogy though?
I'd hope so but Nolan is obviously a guy with his own cool ideas that turn into great movies too.
it's not a trilogy but he has said that he would love to do a Bond movie at some point, so he is still interested in putting his own ideas in to known entities after doing Batman
I hope they choose someone that commits to all 3 at least, they are obviously planning movies after the fact with how much money they spent on the product, but 7-9 need to be their own entity and should feel like a continuation of each other
which you only get in a situation where one director stays on for the whole trilogy
I would second Guillermo del Toro. He's an amazing storyteller.
To be honest, if I were an already established director, I wouldn't touch this with a 10 foot poll. The fans are insane and the expectations will be incredibly high. You could do any number of projects without the stress of dealing with Star Wars crazy fans.
As Kathleen Kennedy is heading up Lucasfilm now I could actually see Spielberg getting the nod, since they're pretty much best friends.
Not really convinced Spielberg would be the best choice for a Star Wars movie though, Spielberg's involvement in the last Indie movie wasn't spectacular to say the least. Kinda jumped the shark involving with the whole aliens bit.

I think the Aliens thing was more Lucas. I think Spielberg had reservations, but Lucas talked him into it.

What about whats his face, the guy that made that remake of Dances with Wolves. Or does he need minimum ten years to make a movie?
Also every time I see Micheal Bay mentioned I have to post this... sorry for quality:

From what I've heard VII is supposed to be 30-40 years after Endor. If that is the case why couldn't Hamill play Skywalker again? Same with Ford and Fisher? Seems to me that the old characters would look about the right age, nothing that make up couldn't make believeable.
Obviously you wouldn't want them to be the main characters but they could cover background roles.
You give Hamill a real job again and he probably gets back in shape in a year. Not sure if Fisher would care enough though.

Hamill isnt the problem. Fisher is the problem. Its not even just the weight as much as its the booze and coke.
