it depends on how thick you/they can pour on top of the old slab, if not very thick i would not recommend it since they would only grout it (no aggregate only sand/concrete/water mix) and it can chip easily or seperate from the lower section if not done 100% correct and in our climate with the ground shift it makes it harder.
Also I agree with above if you color use a complete color mix instead of just the pigment while stamping or polishing, as like above it can chip or it will wear off in high traffic areas once the "sealer" starts to wear.
